Lime‑Grilled Chicken Breasts

Ingredients
Recipe makes 4 Servings
* 1 Lb Grade‑A Skinless Boneless Chicken Breast, pressed to a 1/4 in thickness
* 1/8 Tsp kosher salt
* 1/8 Tsp H‑E‑B Black Pepper
* 1/2 cup(s) H‑E‑B Honey Mustard
* 1 Tsp lemon, zested
* 3 Tsp lime, juiced
* 3 H‑E‑B Peeled Garlic, crushed
* 1 Tbsp Kikkomon All‑Purpose Less Sodium Soy
Instructions
1. Place chicken breasts between 2 sheets wax paper, then pound with a meat mallet or rolling pin to a uniform thickness of 1/4‑inch.
2. Season with salt and pepper.
3. Place honey mustard in a large shallow glass dish.
4. Grate lime for zest, then squeeze to make juice.
5. Combine zest and juice with honey mustard, garlic and soy sauce to make marinade.
6. Turn chicken in marinade to coat both sides. Let stand 10‑30 minutes.
7. Meanwhile, heat charcoal 30 minutes until covered with a light layer of gray ash or heat gas grill on high 10 minutes with lid closed.
8. Grill chicken 4 inches above medium heat.
9. Cook 4‑6 minutes per side until chicken reaches an internal temperature of 165°F.
