Mint Chocolate Chip Ice Cream Dessert Recipes





We all need different and delicious foods to enjoy this precious time. So I’m stating a recipe of Mint Chocolate chip brownie ice cream cake. This name sounds like pretty fancy but trust me this is a simple and beautiful cake one can ever bake and eat. People often get worry about the word ice cream in it that they might require an ice cream maker but no we don’t need any kind of ice cream maker. Interesting, isn’t it?

This frosting combined with Ice cream cake when combined with delicious brownie cake, it turns out to be yummiest treat delight. Though if you are careful enough while baking a cake you can save your time too. Just follow the careful instructions.

You don’t need to cook anything like eggs or anything, you don’t need any ice cream maker just whip some whipping cream, fold in frosting and flavours and just put it in refrigerator, as simple as that.

So for now, we will start with rich brownie cake bottom, baked in spring form pan, then rich creamy whipped cream combined with condense milk layer, freeze this mixture to get ice cream like texture and then garnish with more and more whipped cream and sprinkled with chocolate vermicelli.

INGREDIENTS:


* 1 1/4 cups granulated sugar
* 6 tablespoons unsalted butter
* 1/2 cup plus 2 1/2 tablespoons unsweetened cocoa powder
* 1/4 teaspoon kosher salt
* 2 large eggs
* 1/2 cup all-purpose flour
* 1/2 teaspoon vanilla extract

For the no-churn mint chocolate chip ice cream layer:

* 2 cups heavy (whipping) cream
* 1 (14-ounce) can sweetened condensed milk
* 2 1/2 teaspoons peppermint extract
* 1/8 teaspoon kosher salt
* 1 drop kelly green gel-paste food coloring (optional)
* 4 ounces semi-sweet chocolate, finely chopped

For the garnishes:

* 3/4 cup heavy (whipping) cream
* 1/3 cup powdered (confectioners’) sugar
* 1 tablespoon chocolate vermicelli

Let’s have a look at the detailed directions.


DIRECTIONS:

Pre-heat the oven at 350 degrees, like you do every time before baking a cake. Take a 9-inch spring form pan and grease with butter or with non-sticky oil spray.

Take a medium sized, heat proof bowl and place butter, sugar, salt and cocoa powder and heat in microwave for about one minute interval and keep stirring in the intervals. Heat until the butter is completely melted and the mixture is too warm to touch. Add one egg at a time and keep mixing until the mixture is well-combined. Now add flour and stir, at the end pour vanilla extract and mix well.

Your cake batter is ready to put in pans and ready to be baked.

Put this mixture in the already greased pan and bake for about 30 minutes. We need a moist and dense cake so when you insert the toothpick in it to check if it is cooked or not, make sure your toothpick come out with very little crumbs. Let it cool in the pan before you cover this with creamy-minty frosting and chocolate chip.

To make the no-churn mint chocolate chip Ice Cream layer:

Take a large mixing bowl, place cream and beat with electric beater until it is fluffy and creamy. Add condensed milk and fold with a spatula, pour peppermint extract, gel paste food colouring and salt and beat until the mixture is well combined. Now add chopped/crushed chocolate and mix accordingly.

Now remove brownie pan from the fridge and spread this creamy mixture over the pan and spread evenly over the crust and place the pan again in the fridge until cool, freeze and firm. When this is absolutely cool and firm, garnish with chocolate vermicelli and whipped cream. Or just follow the complete instructions.

To garnish:

In a medium mixing bowl, pour whipping cream and whip until the cream is fluffy, make sure to beat at high-medium speed. Now add powdered sugar and keep beating until the mixture is creamy, fluffy and soft. Transfer this creamy frosting in a piping bag and pipe larger starts at the most edges of the cake and smaller stars at the sides and sprinkle with chocolate vermicelli. Put again in fridge and serve cool.

This is the simplest and beautiful cake to serve at any party or get together and even on birthdays. Just put some candles on the cold cake and serve.
